Having used both before, I personally just use Variaudio nowadays, for workflow purposes. However I use it for just monophonic tracks, nothing too complex.

Imo Cubase definitely gives the best workflow for composing & orchestrating! Between its efficiency with large templates/sessions, expression maps, midi processing, I think it provides the best kit for orchestral production. (This is coming from having also used PT, Logic, and Ableton professionally). There’s a reason why it’s the most popular DAW for that purpose. :)
At the end of the day though, any DAW will do about the same thing; it will just come down to your preference and workflow!
