So I’ve got myself a bluray burner with m-disc support and some m-disc bluray discs to use for long term cold storage of photos and videos. Now, my question is whether I have to collect enough data to fill the disc’s full capacity and write it all at once, or can I fill it partially, like half of it’s capacity, and then write more data to it at a later point?
It’s been a while since I’ve used writable optical media, but there was a concept of ‘closing a session’ which restricts adding additional content. If that’s in play, you may not be able to add data.
If you didn’t write the initial data as a “multi-session” disc then no, the data session (track) got finalized and the disc “closed for new data”.

Can I add additional files to an M-DISC™ after it has been burned?
