My Redmi Note 8 got busted unexpectedly and the screen is cracked and unresponsive. And also seems to get less and less legible. I can’t unlock it as the touch doesn’t work but I had a lot of important notes and data I’d like to at least be able to see if I can’t get them back.
Is there a way to at least remotely control and see the screen (from a PC maybe)? Without all those mirroring apps since I can’t do anything with the phone. All methods I’ve found all include having to set something up with the phone before hand and that’s impossible by now. Is there anything I can do?

Nothing you can do except replacing the screen.
If you activated the USB sharing than you could plug it in your pc.
Usb-c dock maybe? I’m not sure if you have to tap anything to authorize it or not. You could connect a monitor and kb/mouse that way.
Got a mouse hooked up and it worked like a treat!
