My brother put my HDD with the cover opened on the gas stove and burned it for about 5 minutes before I found out, I have work projects on it, I also had backups but they are a few weeks earlier so I have made quite some progress since then.

That drive basically died when your brother opened it.
Send it to a data recovery service if you need to. Very doubtful they can get the data even with clean rooms and special tools. Swapping platters will do nothing, because the condition of the platters is the issue here.
The physical damage already killed it there even before the heat on the platter
there are companies that do data recorvery. you shoukd send your hdd to one to save your data. it may cost some money and not 100% that you get everything back.
