So, as the title says, I am very much confused as we (wife and myself) have noticed that often times when our 1yo daughter is having wife’s phone in her hands, its unlocked. Many times, I have myself locked the phone and she somehow manages to unlock it.

The phone is Samsung A51 and has pattern, facial recognition and biometric locks enabled. A wild guess is that the phone recognises through facial recognition and unlocks.

Is there anyway to check (like a log) as how was the phone last unlocked a couple of times.

    Don’t let a child use a mobile device unsupervised. If they paw at it they’ll lock you out by putting in wrong PINs.
