I am planning to sell my phone and I am hesitant because I am thinking that what if i deleted my private stuff and the buyer might have the chance to retrieve it.
Is there a chance that they can retrieve my old stuff even if I already deleted it?

The phone is shipped with Android 11, which is already mandated to use file-based encryption. Factory reset will remove the key, so do that, and it’s guaranteed that no data can be recovered.
There are ways to retrieve deleted data from phones and USBs, but I wouldn’t worry too much, mostly because the software you can get usually just recovers photos.
