I was downloading Windows 11 bootable disk using an external HD (WD 1TB) with a lot of important data on it but the process was cancelled in between. Now I can only see 32 GB of data (the device renamed itself to esd-usb).

It was marked as deleted, since you used the media creation tool to erase the drive.
You can try data recovery tools, but filesystem data such as file names and directories, and anything located in the first few GB of space on that drive may already be gone
