So we moved into a new place and we got Fibre installed and we noticed there were a bunch of random CAT and coaxial cables in that little box area, what could they be for?

Those are probably the cable and ethernet cables going to the outlets in your house. Are there any ethernet or cable outlets in any of your rooms?
