my isp has add on plans that can supposedly know if im using an xbox, certain games or a ps.
how do they detect this? And is there a way to, for example, use the playstation bundles on xbox? (they offer more quota)

Probably by the normal “communication” that these devices tend to do (think, telemetry).
Many of our network devices become useless without periodic (or more) remote Internet connections.
For example, if an xbox always reaches out to xbox-ms-spy.microsoft.com as a regular part of what it has to do to operate, they could infer that you have an xbox if they see traffic to that destination.
